Ingredients:

  • 1 cup of dried white beans (200g)
  • 1 cup of corn (150g)
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 medium carrot, diced
  • 1 medium potato, diced
  • 200g of chorizo sausage, sliced
  • 200g of beef, cubed
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • 4 cups of water (1L)
  • Fresh parsley for garnish

Instructions:

  • Soak the dried white beans in water overnight.
  • In a large pot, heat some oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  • Add the sliced chorizo and cubed beef to the pot, cooking until browned.
  • Stir in the diced carrot and potato, cooking for a few minutes.
  • Add the soaked beans, corn, paprika, cumin, salt, and pepper to the pot.
  • Pour in the water and bring to a boil.
  • Reduce heat and let it simmer for about 60 minutes, or until the beans and vegetables are tender.
  • Adjust seasoning if necessary and serve hot, garnished with fresh parsley.
